Steps to make Gluten-Free Bread Made With 100% Non-Glutinous Rice Flour:
  1. If your bread maker includes kneading blades for rice flour, please fit them into the machine now.
  2. Place all of the ingredients except for the rice flour and yeast into the bread case.
  3. Add the rice flour into the bread maker last and place the yeast into the designated chamber.
  4. Set the course to "Rice Flour Bread" (and to a "Gluten-free" setting if you have it), and the colour to "Pale". Then press "Start".
  5. About 15 minutes into the course, open up the bread maker and push any dough that has stuck to the sides back to the bottom of the bread case and incorporate it into the rest of the dough. (My bread maker performs this function automatically.)
  6. Just before the bread is due to finish baking, take it out of the bread maker. Baking time may vary depending on the brand of bread maker so please adjust these times accordingly.
  7. It's ready! If the bread dries out, it may go hard so please cover it with a damp cloth before leaving it to cool.
  8. So that the bread doesn't dry out, please store it in a plastic bag or keep it wrapped in cling film. Please slice the bread only once it has fully cooled. If you slice it while it's still hot, you will ruin the texture.
  9. If you can't scrape down any dough that gets stuck to the side of the bread maker you may end up with a bread covered in odd lumps. If that happens then please just cut the lumps away with a knife.
  10. Store-bought rice flour mixes often contain thickening agents so I added cornstarch. I'm still trying to decide on the right amount, though.

Add in butter and eggs and blend on low scraping the sides as needed. The protein and wild yeasts more likely to be present in these flours may help to re-energize the starter. Unlike wheat-based bread, which can be made with only flour, water, salt and yeast, gluten-free bread requires a blend of flours and starches. My original bread recipes both use brown rice flour.
