Also known as "sweet rice" or glutinous rice (though it's gluten free), sticky rice is a large white grain that becomes translucent, shiny and extremely sticky when steamed. Also known as glutinous rice or sweet rice, this type of grain sticks together when cooked. The Thai variety has a longer grain than Japanese or Chinese sweet rice. Although in Thailand sticky rice is steamed in long funnel-like baskets, our method, even if it's not strictly authentic, gives extremely delicious rice and is much easier to make.

  1. Prepare 1 cup Sticky rice
  2. Get Water

Lo Mai Gai (steamed sticky rice in lotus leaf),one of the most classic and popular dish in dim sum halls, is easy to make at home. It contains all sorts of yum ingredients sticky rice, chicken, sweet sausage (lop cheong), Chinese cured pork belly (lop yok), salted egg yolk and shiitake mushrooms. The sticky rice needs washing first so place your glutinous rice in a large bowl and put in lots of tap water - at least double the height of the rice in the bowl. Wiggle your fingers around in the rice like you are tickling it and the water will go cloudy.

Steps to make Steamed Sweet Rice / Sticky Rice:
  1. Pour sticky rice in a bowl and rinse it twice with water.
  2. After rinsing, put about 2 cups of water to cover the rice and soak at least 4 hours or overnight for best results.
  3. Put 3 cups of water in a rice cooker pot.
  4. Put the streamer tray in the pot.
  5. Strain water from the soaking rice.
  6. Put the rice in the steamer tray. It's ok if a little of the rice falls through into the water.
  7. Set the rice cooker into steam mode to cook it and push start.

The sticky rice needs washing first so place your glutinous rice in a large bowl and put in lots of tap water - at least double the height of the rice in the bowl. Wiggle your fingers around in the rice like you are tickling it and the water will go cloudy. Drain off that water and repeat with more water, more tickling and then drain. Soaking the rice will allow the grain to swell slightly and is key to creating authentic sticky rice. In a pinch, you could try to soak for two hours - but I definitely wouldn't go below that.
