  1. Mix Maida, Salt and water to make a semi-soft dough, like the dough for chapatis
  2. It takes 5 to 6 minutes.
  3. Now leave the dough covered for 15 minutes in a cloth.
  4. After 15 minutes take out the dough and knead for 20 to 30 sec.
  5. Now make small sized balls (Like for poori) from the dough.
  6. Cut into equal size
  7. Now roll the ball into poori size using flour dust and keep the poori aside on a plate, do for all 10 balls.
  8. Now take one poori and grease with oil and dust corn flour over the poori.
  9. Now keep 2nd poori on top of the first and grease it with oil and apply corn flour dust.
  10. Similary keep on adding pooris followed by greasing and dusting with corn flour and make a tire with 5 poori, in one tire only 5 pooris should be used.It looks something like below.
  11. Now dust with corn flour on both side and roll into a big chapati.
  12. Heat a tawa and roast this chapati to the tawa. After 10 sec flip over the side and roast the other side for another 10 second.
  13. Take out immediately from tawa and keep aside covered in cloth to cool down.
  14. Similarly do it with the left 5 pooris.
  15. Now after 10 minute take out the chapati and untier each layer gently.
  16. Your pastry sheet is ready. Each sheet will be so transparent that you would be able to see your palm through it.
  17. Cut the sides and your market textured pastry sheet will be ready to use. You can keep these sheets in a plastic bag and refrigerate for later use.
