Directions: In boiling water,add rice,salt,green cardamom,cloves and mix. Add yellow food color,mix and boil until rice are ¾ th done then strain & set aside. In saucepan,add milk,sugar and mix well,bring it to boil and cook until sugar is dissolved & set aside. In pot,add ghee and let it melt,add cloves,green cardamom and mix.

  1. Prepare Instant gulab jamum
  2. Make ready 1 cup milk powder (100gms)
  3. Make ready 1/2 cup maida/all-purpose flour (70 gms)
  4. Get 1 tsp baking powder
  5. Make ready 2 tbsp ghee
  6. Get 4 tbsp milk to knead the dough
  7. Take Sugar syrup
  8. Prepare 2 cup sugar(200 gms)
  9. Make ready 2 cups water(use same cup)
  10. Take 1 pinch saffron strings
  11. Prepare 1/2 lemon juice
  12. Take 2 cardamom
  13. Get Sweet rice/zarda
  14. Take 1 cup basmati rice soaked in water
  15. Make ready 1 cup sugar
  16. Make ready 2 tbsp ghee
  17. Make ready 2 cardamom
  18. Make ready 1 tsp orange colour
  19. Get 1 cup mixed dryfruits,tutifruiti and glazed cherries
  20. Make ready Mawa
  21. Prepare 1 tbsp ghee/butter
  22. Get 1/2 cup milk
  23. Prepare 1 cup milk powder
  24. Make ready 1 tsp cardamom powder
  25. Prepare 1 tsp sugar

My husband says "it is out of the world". Shahi Zarda - Dessert, Mithai, Sweets Traditional shahi zarda is as much a fundamental part of Eid-ul-Fitr celebrations as the many customs. Enjoy this royal recipe of shahi zarda. When rice is almost done, strain in a colander and leave in colander for a few minutes.

Instructions to make Shahi Zarda:
  1. First we will make gulab jamun as it needs time to soak in sugar syrup. First take a bowl with milk powder,all-purpose flour and baking powder and mix well.now add in ghee and make the batter moist.
  2. Now add milk spoon by spoon till you knead a soft dough.when done cover it and let it rest for few minutes.
  3. Meanwhile take a pan with water,sugar,cardamom and few saffron strings and boil it till its slightly thick in consistency but not 1 string consistency.
  4. Then add in half lemon juice to prevent sugar crystallisation. Now sugar syrup is ready.now make small dough balls and shallow fry on low heat till golden brown.
  5. Remove them on paper towel then add in sugar syrup.It will take 1 hour to soak in the sugar syrup. Later you can see the result in pic 2 and pic 3.
  6. For zarda/sweet rice.Heat a vessel with sufficient water,add in cardamom and orange food colour. Bring it to a boil.
  7. Now add in rice and cook till its 90 percent done and strain it in Callander.
  8. Now heat ghee in same vessel add in cardamom with sugar,give a slight mix then put the rice all over and cover the lid.cook on slow fame and till sugar melts and rice absorb all the water.(keep check in between)
  9. Meanwhile prepare the mawa.heat a pan with ghee and milk.bring to a boil then add in milk powder with cardamom powder and sugar mix well and cook it all combined and form into a dough.
  10. Now everything is ready so let's assemble.Remove zarda(sweet rice) in a serve bowl then top with dryfruits,tutifruiti,dry roses,mawa and gulab jamun.
