Japanese chestnut rice (kuri gohan 栗ご飯) is seasoned to perfection and cooked with fresh chestnuts nestled into the grains. The flavour is rich and nutty - perfect for a unique winter side dish. I first heard of this dish through a good friend of mine who used to live in Toronto, but returned to live in Japan again. Put the rice, water, mirin, soy sauce, and salt into your pot or rice cooker, add the chestnuts, and then place a piece of konbu on top of everything.

Steps to make Japanese Chestnut Rice:
  1. Cook the fresh chestnuts and peel off the skins. I normally boil them first for 3 minutes and then I roast them in the oven for 5 more minutes.
  2. Wash the Japanese sweet rice and regular rice put it into the bowl for the rice cooker.
  3. Add soy sauce, mirin, salt, water, cooked chestnuts.
  4. Turn on the rice cooker.
