The ingredients needed to make Biko:
  1. Get 2 cups glutinous rice
  2. Take 1 cup dark brown sugar
  3. Make ready 1 cup coconut milk
  4. Take Pinch salt
  5. Make ready 1 tsp vanilla

This classic Filipino rice is deliciously sweet, creamy, chewy, and gluten-free! I went to a small get-together last weekend and had the best-tasting biko on the planet! Biko is a type of sticky rice cake, otherwise known as kakanin. With a combination of coconut milk and brown sugar, biko is a delicious dessert or merienda to share with your loved ones!

Steps to make Biko:
  1. Wash glutinous rice, then add 1 cup of water. Simmer in low heat, until cook (15-20 minutes). Set aside
  2. On a separate pan, boil coconut milk until solid particles are seen (coconut fats/brown bits). Remove and set aside the fats. Wait until the coconut turned into pure clear oil.
  3. Add sugar, vanilla and cooked glutinous rice. Mix thoroughly. Cook in low heat for 15 minutes, until sugar is dissolved. It is important to continuously mix it to avoid burning.
