Rice Kheer or Chawal Ki Kheer is a pudding from the Indian subcontinent, made by boiling rice along with milk and sugar. It is typically flavored with spices like cardamom or saffron and dry fruits like almonds, raisins, cashew etc. It is also known in some regions as payasam, payasa, phirni, firni etc. Rice kheer or chawal ki kheer is the Desi equivalent of rice pudding.

Rice Pudding: (Chawal ki Kheer) is one of the most popular of recent trending foods on earth. It’s simple, it is quick, it tastes yummy. It is appreciated by millions daily. Rice Pudding: (Chawal ki Kheer) is something that I have loved my whole life. They are nice and they look wonderful.

To get started with this particular recipe, we have to prepare a few ingredients. You can cook rice pudding: (chawal ki kheer) using 6 ingredients and 4 steps. Here is how you cook it.

The ingredients needed to make Rice Pudding:

  1. Take 1 cup rice, soaked in water 2-3 hours or all night
  2. Take 1 litre whole milk
  3. Take 5-6 cardamom pods
  4. Prepare sugar to taste
  5. Take 300 ml double cream
  6. Make ready Almonds and pistachio silvered

Chawal = Rice and Kheer = Pudding Kheer is a sweet dish or pudding, made with milk as a base with the addition of rice and sugar, flavored with cardamom and saffron and topped with nuts. Chawal ki Kheer is the conventional Indian desert. It is an ideal dish to celebrate any festival in India. Kheer is very close to my heart as we used to eat in our childhood and our grandmother prepare for us by adding lots of dry fruits.

Instructions to make Rice Pudding:

(Chawal ki Kheer):

  1. Boil your rice until it is mushy - this is at least 10 minutes of active boiling
 - Take a wide bottomed steel pot (NOT Non-stick) to bring your milk to a simmer. - - Lightly crush the cardamom pods and add them to the milk, keep the temperature low,
  2. Once the rice is mushy, drain most of the water and then mash it up with potato masher or grind with hand blender. 
 - Add grind rice to the milk mixture along with the sugar. Mix well. - - Cook on low heat a gentle simmer for an hour or more then hour. The milk will scald at the bottom of the pan but should not burn. Stir with a rubber spatula every now and then to check.
  3. The kheer will cook down quite a bit in this time, add cream and mix well taste sugar and add more if desired. 
 - Garnish with nuts or plain.  - Chill in refrigerator 2-3 hours. - Enjoy !!!
  4. ✅NOTES: - - The kheer cooks beautifully at a low temperature, and requires little babysitting. Turn the heat up and you are on continue stirring.
