Cut sweet potato into bite sizes, wash and wipe dry with a paper towel. Mix all spices in a small bowl (sugar, water, soy sauce, vinegar) Heat oil in a pan (enough to cover about half the height of the potato slices), add sweet potatoes, and deep fry for about three minutes (until they soften), then set them aside. You can see from the photo of my deep-fried Daigaku Imo, the flesh of the fried potato is light yellow instead of deep yellow. But it still looks great with the reddish purple skin.

Instructions to make Daigaku Imo (Deep-Fried & Caramelized Sweet Potatoes) in a Rice Cooker:
  1. I used these 3 sweet potatoes. They weighed 700 g.
  2. Cut the sweet potatoes into rolling slices. Soak in water for a while and drain. Put all the ingredients except for the sesame seeds in the rice cooker bowl.
  3. Mix the ingredients well. Put the lid on and switch on the rice cooker. This is how they look when you mix the ingredients in the rice cooker bowl.
  4. This is how they look when you open the lid after the rice cooker cycle has been finished.
  5. Add the black sesame seeds, and stir well from the bottom. If you stir while the rice cooker bowl is still hot, the syrup is runny and combines well with the sweet potatoes.
  6. When they are well mixed, transfer to a serving dish while it's hot.

You can see from the photo of my deep-fried Daigaku Imo, the flesh of the fried potato is light yellow instead of deep yellow. But it still looks great with the reddish purple skin. Because the appearance is the closest to the Daigaku Imo in Japan, I think Northern Star is best suited for Daigaku Imo. I like the colour contrast between the skin. Ever since, Daigaku Imo has been, although a simple and old-fashioned taste, one of the all-time favorite sweets loved by Japanese people. "Daigaku Imo" is a classic Japanese vegetable treat that was once loved amongst university students in Japan; hence its name—"university potatoes".
