I am pleased to share our family recipe made for "Thai Pongal", a harvest festival celebrated in mid-January in South India. Sakkarai pongal recipe, a temple style flavourful sweet pongal with jaggery, edible camphor, cardamom, cloves and the essential ghee and cashew nuts. Rice and dal cooked with the ingredients like edible camphor, elachi, nutmeg and elachi make it smell and taste DIVINELY. This is my mom's staple recipe.

Instructions to make Sweet pongal:
  1. In a cooker take 2 tsp of ghee, add soaked moong dal(for 15 to 20 mins). Sauté for awhile until it turns aromatic. Now add rice and sauté again.
  2. Add 3 cups of milk and 4 cups of water and pressure cook for 2 whistles.
  3. In another pan take 1.5 cups jaggery and add water. Let it boil to get a jaggery syrup
  4. Once the cooked rice and dal is cooled down, add jaggery syrup. Also add additional cup of milk and boil in simmer. Also add saffron threads soaked in milk.
  5. Add roasted cashews and raisins to it along with cardamom powder. Add additional ghee (2 to 3tbsp). Also add roasted coconut and mix well.
  6. Serve it hot with ghee.

Rice and dal cooked with the ingredients like edible camphor, elachi, nutmeg and elachi make it smell and taste DIVINELY. This is my mom's staple recipe.
